Mr. Fleming Michael William

Director Training

As the main curricula designer and developer of teaching programs in Cereal Tech School of Baking, Mike oversees all aspect of learning facilities in the Centre, including teaching its key modules. With more than 50 years of experience in the industry, Mike is a valued team lead of the Centre. His teaching experience has been vast, commencing as a Pastry Instructor at School of Tourism and Hospitality in New South Wales, Australia, before expanding his teaching career to other parts of Australia, China and eventually in Singapore as the founding principal of (Baking Industry Training Centre in 1993), the first professional bakery training centre in South East Asia. He was responsible for the establishment of National Technical Certificate, 2 & 3 in Baking.

One of his major achievements in Singapore was to develop and enhance the baking capabilities of MacDonald’s bakery operators in 2002 which were eventually extended to South East Asia and Middle East. He also played a major role in developing curricula to enhance the skills and competency of Home Economics teachers within the baking industry. Mike’s academic qualifications have also been vast; Diploma in Teaching from Sydney College of Adult Education, Bachelor of Education (Technical) from Sydney College of Adult Education, Graduate Diploma in Social Communication from University of Western Sydney from Australia and Advanced Certificate in Training and Assessment from Institute of Adult Learning, Singapore.

Mr. Bernard Chua

With well over 20 years of experience in the industry, Bernard is both a baker/pastry chef and an Instructor/mentor. His extensive industrial experience as a baker/pastry chef is renowned in establishments like The Regent, Goodwood Park and Carlton Hotels, coupled with the managerial experience as a baking consultant. His teaching exposures included stints with Baking Industry Training Centre, Shatec Singapore and also Christchurch Polytechnic of New Zealand.

Bernard’s educational credential includes Certificates in Bread, Pastry & Cake Making from BITC & Industry Trainer certificates from ITE, Singapore as well as Baking Skills Certificates from Food Corp, New Zealand. He too, holds AIB Certificate in Applied Baking Technology, Diploma in Baking Arts & Science, and Advanced Certificate in Training & Assessment from the Institute of Adult Learning and finally, a Higher Diploma in Hotel Management from Shatec, Singapore

Mr. Gan You Cheng

With well over 35 years of baking knowledge and experience under his belt, Mr Gan You Cheng brings with him a sleuth of experience to the school. Dedicated to his craft, Mr Gan has extensive teaching experience, having been a bilingual bakery instructor at Baking Industry Training Center, Singapore for more than 24 years.

Mr Gan graduated from AIB International, Industrial Baking Science in 1985 and also holds the Certificate in Adult Continuing Training and Assessment from Singapore Training and Development Association.

Ms. Germaine Tan

Germaine is involved in the delivery and assessment of WSQ modules within our Diploma and is a specialist in Sugar Craft. She is a holder of Diploma in Baking Arts & Science, Certificate in Applied Baking Technology from AIB International USA.

She holds an ACTA Certificate and the Diploma in Adult Continuing Education (DACE) from IAL, Singapore. She is also holds a Diploma in Administration Management from the Institute of Administration Management, United Kingdom. Germaine brings a passion and commitment to Adult education that is shared with students

Mr Lim Choon San

Chef San brings over 14 years of industrial experience to his position as Bakery Instructor. He stated his career in 2004 as a trainee with Four Leaves Bakery in Singapore. Chef San is a graduate of BITC where he obtained the Diploma in Baking & Pastry Arts Pastry and Certificate in Bakery Management, Certificate in Supervision 2012- 2014. He has extensive work, supervisory experience and skills covering baking, pastry making and high quality confectionery, through having worked in a number of well-established hotels in Singapore.

Chef San brings a new level of experience and enthusiasm to our team of instructors.
